Here's my new favorite method to cook trout. I like fried fish alot but sometimes I just don't want to deal with the grease and the cleanup so I came up with this:
Clean your fish.
Take a baking dish and line the bottom with celery sticks spaced about an inch or two apart. Add a little water to the bottom of the pan so nothing scorches.
Season the fish with salt and fresh ground black pepper, and lay perpendicular on the celery. Sprinkle a little rubbed sage on the top of the fish.
Thin slice some onion and garlic and lay alternatimg strips across each fish.
Cover the pan with foil and bake at 350 until done.
The celery and sage flavors go real well with trout in my opinion and cleanup is a breee.
