I've got friends who have worked in packing plants. They could skin anything fast too.I used to skin coon in less than a minute at the fur shed. Our town had a rendering plant too that the fellas would open up a beef the way I described.Stick a needle into the animal just under the hide that was connected to an air compresser and blow the animal up a bit breaking all of the cords and membrane loose in seconds.Anchor the animal around the head to one wall with a chain. The other end at the neck hide grommeted off connected to an electric wench to the other wall and the hide is off in less than 2 minutes. No knife slits.A clean clean hide. They would do it that fast with a 1200 pound animal too.
If you learn how to keep an edge on a knife the way the packing plant boys do you can use almost any kind of knife, but most times it's done with a slender boning type knife.
The fella on the video wasts a lot of hide that could be used for brain tanning.
