I'm going to make a general statement, but I think sinew backing was probably NOT done on any continental European bow during the 12th century with the possible exception of the eastern Mediterranean coastal areas.  I think the closer you were to Constantinople, the more common the sinew backed (and composite) bows became.
Any critter tastes good with enough butter on it.
