The asparagus patch that I planted 3 years back,(in a fit of optimism), is coming on strong now so we've been enjoying that. My neighbor came over Friday evening with some miss delivered mail and 3 dozen fresh eggs. Their hens, 10 of them, are putting out a lot of eggs and, since I plow their drive when needed, they reward us with eggs. Good trade...

The wild plums were in full bloom early on but don't know how that last cold spell will effect them yet. The wife made jam last year but there were bubbles in the jars so she re-did the batch into some BBQ sauce. THAT turned out real nice and we're down to just 3 half pint jars left.

Poke salat time here in N Alabama, it is pretty amazing food if it is cooked correctly, if not you may have to camp out in the bathroom.

I boil and blanch my poke weed three times, dumping off the water every time to remove the toxins. I cook it by first sautéing onions and garlic in real butter, I drain the blanched poke and put it in in the pan with the onions and garlic. I adjust the flavor with garlic salt and pepper. When I like the taste I break and egg in the pan and scramble everything together, then I cook the mix until it is firm and not watery anymore.
