In the knife building what are some of the methods used to get the high degree of plish that I'm seeing done here? Would like some polish brands please.

Oldgun, progressive sandpaper down to wet 600 works and for a mirror finish there are buffing compounds by Sunsheen. You can search www.riogrande.com . They have a wide selection of finishing products.
