I noticed that no one seems to use a hollow grind on their knives. Is their a reason for that? I made a few knives back in the 60's in high school shop, believe it or not. One of them was a Bowie with a 10 in blade. Anyway, at the time hollow ground was the thing and I wondered why it seems to have lost favour.

Doesn't the grinding machine determine hollow or flat ground?

Yeah, we don't have huge 3' diameter wheels these days.

If you angle the blade and cut with the corner of the stone(sort of push the blade into the grinder) you can adjust the depth of the grind. You can also use a right angle grinder on the flat almost to give a bit of a hollow grind.

You need a grind on atleast a 10" wheel. Grinders like that are expensive

I got plans for a 3 x 72 belt grinder.. Building it yourself still looking at about 300 bones.. Is it worth it???? you'd have to really crank'em out...
