I want to know how you prepare that stuff to eat, or if you really do. Nice fish.

That "stuff' is some of the best fish you can eat. All gar are predatory fish not unlike bass, crappie, pike walleye etc etc. Getting to the meat is another thing. We cut the head and tails off with an ax. Then we split the back with a pair of tin snips. One guy pulls the armor back and another fillets out the tenderloin no bones all white meat. My favorite recipie is to boil the meat in crab boil mush it up with some ro-tel tomatoes and cajun fish fry with some fresh onion and green peppers to make gar cakes. If you ever get one in the 3ft range give it a try you wont be sorry. The scales make some decent small game points. I would advise wearing glove as the scales will shred ya.
Happy fish shooting

I have to agree, a very, tasty fish. I'll cut it into nuggets and bake it like shrimp scampi or cut it into strips and soak it in wild, sour orange juice and tabasco peppers with garlic and salt, then slowly dehydrate it into a fish jerky. Very good tasting snack.
