100 Edible Mushrooms by Ernie Kuo
The Audubon Guide that Pat mentioned.
There are also several good regional texts. Mushrooms of West Virginia and the Central Appalachians is the best one I've found so far for my area.

are there any edible mushrooms that grow in texas, just curious
