Nice Haul...
I'm planning on doing the drive about to the processors weekend after next... :)
This will be my first go at harvesting sinew.
Until now I only cut it out of my meat to make it more tender. :-\

How come you didn't get the back tendons? They're longer and easier to process. I get back tendons from my local processor, and don't even bother with the leg tendons.

I would love to get my hands on some elk legs.

wha cha goin to do with all them toes? quick 5 minute dip in boiling water to loosen - grap with pliers and off they come. We use them to make girls puberty rattles and put on the womens dance skirts. If you want to get rid of some of the hooves/bones after you de-sinew them let me know what you want to trade.
