just enjoyed some young beaver backstraps and eggs for breakfast-DELICIOUS. We caught a small beaver up at the cabin on Sunday and pulled the backstraps.Marinated 3 days in italian dressing and that was some good eating.The rest got cut up for bobcat trapping next fall.What are the dates for the Classic this year?Have a great day!!Lloyd

After splitting open a couple of beaver tails I'd like to try some backstraps. The meat inside the tail was firm, and white, so I imagine those loins would be great. The trapper in the office next door loves them. See a lot of beavers in the back of his truck with the straps cut out.

I had breaded beaver cutlets a few years back.They were quite good.

Sounds good,I like about any kind of meat marinated in Italian dressing or rapped in Bacon. ;) :) :)

All this time I didn't know beaver laid eggs. :D
Beaver is a great tasting critter for sure. I like your other use for it also. It is one of the best bobcat baits you can find.
