Kitchen Set, Nitro V & AEB-L

Just finished up this set on commission. 

The chef knife is Nitro V heat treated to 61-62 HRC, 10 inch blade.

Paring and filet knives are AEB-L also heat treated to 61-62 HRC.

AEB-L is a stainless steel used for making straight razors and Nitro V is basically the same alloy but with Nitrogen added.  I really like these two steels.  They don't hold an edge as long as some of the super steels like 3V, but much easier to sharpen and maintain.  Gets incredibly sharp as well.

Handles are stabilized spalted maple.

Now I can finally get caught up on the KITH.

Real nice!  I hope I saved the cutt off the spalted maple tray I made!  I got a couple of blades to haft.
