Decrowning is an art. It involves more than just flattening out the top. That lateral grain has to be continuous and not violated.  In other words, if the belly dips so must the back.

Because it is hard to do correctly backing is a good idea as Brad said.

I just leave crowned  saplings a bit longer say 2 inches.
