When do you guys scale your carp skins?  Do you do it while on the fish or after applied to your bow?

On the fish. If something were to happen, a slight tear in the membrane that lays over the scale, it could be disasterous on the bow.... but if it happens on the fish, you have room to move over and use the skin next to 'the oops'.
Straight wood may make a better bow, but crooked wood makes a better bowyer
