I don't think you should leave taps in the trees. I always wanted the tree to heal up when the sap season was over.  I miss making syrup since moving to Texas.

This tree is coming down in the spring. It is a silver maple that is ready to blow over on my house. Never cared about it much. Silver has a lower sugar % than others but still works.

How you make a bow from a knoty peice of wood like that is beyond me...  I'm scared of knots.         Good JOB!  AWESOME!
