Is beef neck tendon good sinew?

 I have several beef neck tendons drying to use as sinew. They have been cleaned of red meat and fat and washed several times before drying. They have been drying for 3 weeks and are oily to the touch. They will need to cleaned of the oil before use. Is there any other processing that needs to be done?

Never tried it. I know this, any available fresh sinew is good sinew. Some is just better in my opinion. Are they a nice translucent amber color? If so you can seal them up and stash them for eternity.

 they are amber colored and drying nicely but still oozing oil as they dry.

I tried it once, not worth the effort.  It is sinew by definition but bears little resemblance to leg or back sinew in actual usage.
If God didn't want man to eat animals, he wouldn't have made them out of MEAT!
