Yep I remember that BJ at ElmHall and yes I liked it. No DC I don't smoke it, just marinate it for 24 hours and the dehydrator for 10 or 12, check it at about 6 hours and rotate the trays ,set on about 100 degrees.

when it is getting close I check it ever hour or so until it is how I want it. Then lay it out and let it cool well before I bag it up.

I also slice it pretty thin, maybe 1/8 to a 1/4 or so, even as I can with a knife.
